What I can't find the answer to is if you can play all your online dynasty games vs humans or if you can only play against a human if a human is controlling that particular team's dynasty.

They really have not said something that exactly answers that. I would be interested in that too. I would imagine it is human/human for anyone with a team, the rest of the teams you play the CPU.

It's hard to judge the graphics since the video is so small. Hopefully EA will start releasing better-quality GAMEPLAY videos soon.
