I am going with NHL 08 for a change of pace.  For me the addition of the AHL teams and playing with them is a big plus.

Have not seen anything about playing with the European Leagues? That would be a nice touch. Is that something for PC's or all versions?

Some of the Euro leagues were in last years version (all formats) and I think in 06 as well.
